Shrimp and Vegetables Chinese Style

Ingredients:

1/2 cup fresh bean sprouts
1 8-ounce package Sugar Snap Peas, Snow Peas, or Purple Snow Peas, stringed and halved crosswise
1 medium zucchini, julienne-cut
3 green onions, chopped
1 pound large shrimp, shelled and deveined
2 tablespoons soy sauce
1 teaspoon Fresh Ginger, grated
1 tablespoon dry sherry
1/2 teaspoon sugar

Steps:

In microwaveable dish, toss together bean sprouts, peas, zucchini and green onions. Arrange in center of dish. Arrange shrimp around edges with tails facing in (thicker part out). In small bowl, stir together soy sauce, ginger, sherry and sugar until combined. Drizzle over shrimp and vegetables. Cover loosely. Microwave on high power for 4-5 minutes, or just until shrimp turn pink and curl loosely (do not overcook). Turn dish halfway through cooking if shrimp appear to cook unevenly. Serve hot with steamed rice.
